4 eggs 1 cup coconut milk 1/4 cup sun-dried tomatoes 1 brown onion, chopped 200g bacon, diced 1 cup spring onions, chopped Fresh bunch of basil, chopped 3 cloves garlic, minced Pink salt Pepper Coconut oil

Preheat the oven to 180 degrees and coat a baking tin with coconut oil.

Whisk the eggs and the coconut milk together in a large bowl until little bubbles form.

Add in remaining ingredients and stir to combine.

Pour mixture into the tin and place in the over for 45 minutes.

This dish is great hot and even better cold - use it as a grab and go for days when you’re on the move!
